Under the Villa of Cigliano there are the original cellars, used for the ageing of the wines DOCG and IGT: the fermenting cellars was builted in 1996 and is composed of iron steel tanks.

The vintage in last years is made on the half of estate by machine, working on youngest and modern vineyards.

The clusters collected are brought to the new cellar where the grape are separed from the stalk and pressed: the must is put inside the iron steel tanks where the fermentation happens within 24 hours. During a time of 15-20 days there are operated pumping overs and delastage, to extract colours and tannins from the skins of the grape.

After devatting, the wine is pumped into the cement tanks located under the Villa: here it remains for 2 months, it is separed from the deposit and put inside barrels of 15 hl, tonneaux (500 lt), barriques (225 lt) for a total capacity of 500 Hl.

The ageing inside the barrels is for 12 month relatived to Chianti Classico, 18 months for IGT, 24 months for Chianti Classico Riserva: during the time of ageing the wine is tasted and analysis are made.
